🍽️ Creamy Dip and Dressing for Smoked Trout

Ingredients
- 1 small apple
- 300 g sour cream
- 2 tsp freshly grated horseradish
- salt
- 1 untreated orange
- 2 tbsp nut oil
- 2 tbsp rapeseed oil
- 0.5 tsp medium-hot mustard
- 1 tsp honey
- pepper (from the mill)
- 4 smoked trout fillets
- parsley (for garnishing)
Instructions
- 1. Peel the apple.
- 2. Remove the core.
- 3. Grate the flesh finely.
- 4. Mix the grated apples with the sour cream.
- 5. Stir in the horseradish.
- 6. Season the dip with salt.
- 7. Rinse the orange under hot water.
- 8. Dry the orange.
- 9. Grate some zest.
- 10. Squeeze the juice from the orange.
- 11. Combine the juice with the citrus zest.
- 12. Add both oils.
- 13. Add the mustard.
- 14. Add the honey.
- 15. Add 2 to 3 tablespoons of warm water.
- 16. Whisk the ingredients well.
- 17. Season the sauce with salt.
- 18. Season the sauce with pepper.
- 19. Cut the trout fillets into small pieces.
- 20. Drizzle the fish pieces with the vinaigrette.
- 21. Place some of the dip on the trout.
- 22. Garnish the dish with parsley.
- 23. Serve the trout.
