  1. 1. Finely chop the smoked fish. Mix it thoroughly with mango chutney and horseradish. Add the butter and season to taste with lime juice, salt, and pepper.
  2. 2. Use a flower-shaped cookie cutter to cut out about 20 flowers from the pumpernickel slices.
  3. 3. Peel the kiwis. Cut out flower shapes from the fruit flesh as well and place them on the pumpernickel flowers.
  4. 4. Fill the smoked fish cream into a piping bag fitted with a star tip. Pipe the cream onto the medallions and garnish with pink peppercorns.
