🍽️ Smoked Fish Medallions

Ingredients
- 250 g smoked trout fillet
- 100 g mango chutney
- 2 tbsp horseradish
- juice of one lime
- salt
- pepper
- 100 g soft butter
- 10 pumpernickel slices
- 3 kiwis
Instructions
- 1. Finely chop the smoked fish. Mix it thoroughly with mango chutney and horseradish. Add the butter and season to taste with lime juice, salt, and pepper.
- 2. Use a flower-shaped cookie cutter to cut out about 20 flowers from the pumpernickel slices.
- 3. Peel the kiwis. Cut out flower shapes from the fruit flesh as well and place them on the pumpernickel flowers.
- 4. Fill the smoked fish cream into a piping bag fitted with a star tip. Pipe the cream onto the medallions and garnish with pink peppercorns.
