🍽️ Smoked Fish Salad with Melon Sauce

Ingredients
- 0.5 honeydew melon
- 50 ml prosecco
- limes
- 2 tsp horseradish (freshly grated or jar)
- 4 tbsp quark
- salt
- pepper (from the mill)
- cayenne pepper
- 4 trout fillets
- 1 papaya
- 1 bunch spring onions
- 2 tbsp chive rings
- lime slice (for garnish)
Instructions
- 1. Peel the melon and remove the seeds.
- 2. Puree the flesh with a hand blender.
- 3. Mix the puree with prosecco, lime juice, horseradish, and quark to form a smooth sauce.
- 4. Season the sauce with salt, pepper, and cayenne pepper.
- 5. Cut the trout fillets into bite-sized pieces.
- 6. Peel the papaya and remove the seeds.
- 7. Cut the papaya flesh into approx. 1 cm cubes.
- 8. Clean and wash the spring onions.
- 9. Slice the spring onions into thin rings.
- 10. Mix the trout pieces with the papaya, spring onions, and chives.
- 11. Place the mixture on plates.
- 12. Drizzle the melon sauce over the top.
- 13. Let the salad rest for 10 minutes.
- 14. Garnish with lime slices and serve.
