🍽️ Crispy Pie with Smoked Fish and Leek

Ingredients
- 150 g flour
- 80 g cold butter
- 1 egg
- salt
- 2 stalks leek
- 1 tbsp butter
- 150 g smoked salmon
- 150 g smoked mackerel fillet
- 2 eggs
- 100 g crème fraîche
- 100 ml whipping cream
- pepper
- nutmeg
- 1 egg yolk
- 2 tbsp milk
Instructions
- 1. Pour the flour onto a clean work surface.
- 2. Shape the flour into a mound.
- 3. Press a small well into the center of the flour.
- 4. Place the butter, cut into small cubes, around the outer edge of the flour.
- 5. Add the egg and one teaspoon of salt into the center.
- 6. Quickly work the ingredients together with your hands to form a smooth dough.
- 7. Wrap the dough in plastic wrap.
- 8. Let the dough rest in the refrigerator for about 1 hour.
- 9. Cut the leek lengthwise.
- 10. Wash the leek thoroughly.
- 11. Remove the tough ends of the leek.
- 12. Slice the leek into thin strips.
- 13. Heat the butter in a pan.
- 14. Sauté the leek in it for about 5 minutes until soft.
- 15. Remove the pan from the heat.
- 16. Let the leek mixture cool down.
- 17. Take the fillets from the salmon and mackerel.
- 18. Break the fish fillets into small pieces.
- 19. Mix the fish pieces thoroughly with the cooled leek.
- 20. Whisk the eggs in a bowl.
- 21. Whisk the eggs with the crème fraîche and cream.
- 22. Season the mixture with a pinch of salt.
- 23. Add black pepper.
- 24. Add a small amount of ground nutmeg.
- 25. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 26. Line a deep baking tray (approximately 20x20 cm) with baking paper.
- 27. Roll out about two-thirds of the dough slightly larger than the baking tray.
- 28. Place the dough into the baking tray.
- 29. Form a small edge from the dough.
- 30. Spread the fish-leek mixture evenly on top.
- 31. Pour the egg-cream mixture over it.
- 32. Roll out the remaining dough.
- 33. Cut the dough into strips about 1 cm wide.
- 34. Place these strips in a lattice pattern over the pie.
- 35. Whisk the egg yolk with a little milk.
- 36. Brush the surface of the dough lattice with it.
- 37. Bake the pie in the oven for about 45 minutes.
- 38. Remove the pie from the oven when it is golden brown.
- 39. Cut the pie into bite-sized pieces.
- 40. Serve it warm or cold.
