  1. 1. Pour the flour onto a clean work surface.
  2. 2. Shape the flour into a mound.
  3. 3. Press a small well into the center of the flour.
  4. 4. Place the butter, cut into small cubes, around the outer edge of the flour.
  5. 5. Add the egg and one teaspoon of salt into the center.
  6. 6. Quickly work the ingredients together with your hands to form a smooth dough.
  7. 7. Wrap the dough in plastic wrap.
  8. 8. Let the dough rest in the refrigerator for about 1 hour.
  9. 9. Cut the leek lengthwise.
  10. 10. Wash the leek thoroughly.
  11. 11. Remove the tough ends of the leek.
  12. 12. Slice the leek into thin strips.
  13. 13. Heat the butter in a pan.
  14. 14. Sauté the leek in it for about 5 minutes until soft.
  15. 15. Remove the pan from the heat.
  16. 16. Let the leek mixture cool down.
  17. 17. Take the fillets from the salmon and mackerel.
  18. 18. Break the fish fillets into small pieces.
  19. 19. Mix the fish pieces thoroughly with the cooled leek.

  33. 33. Cut the dough into strips about 1 cm wide.
  34. 34. Place these strips in a lattice pattern over the pie.
  35. 35. Whisk the egg yolk with a little milk.
  36. 36. Brush the surface of the dough lattice with it.
  37. 37. Bake the pie in the oven for about 45 minutes.
  38. 38. Remove the pie from the oven when it is golden brown.
  39. 39. Cut the pie into bite-sized pieces.
  40. 40. Serve it warm or cold.
