🍽️ Fresh Radish Salad

Ingredients
- 2 tbsp oil
- 2 tbsp white wine vinegar
- 2 tbsp yogurt
- 0.5 tsp mustard
- 1 pinch sugar
- salt
- pepper (from the mill)
- 1 tbsp chopped parsley
- 1 bunch radishes (cleaned, washed and quartered)
- 0.5 bunch spring onions (cleaned, washed and cut into pieces)
- 2 leaves head lettuce (washed and cut into small pieces)
- 1 handful fresh birch leaves (young, washed and picked over)
Instructions
- 1. Whisk oil, vinegar, yogurt, mustard, sugar, salt, and pepper in a small bowl until well combined.
- 2. Wash and slice the radishes, chop the parsley, spring onions, salad greens, and birch leaves. Combine everything in a large bowl, drizzle with the dressing, toss gently to coat, and serve immediately.
