  1. 1. Mix the quark with the yogurt and a few drops of lemon juice in a bowl.
  2. 2. Wash the tomato, cut it in half, and remove the seeds.
  3. 3. Dice the tomato flesh finely and stir it into the quark mixture.
  4. 4. Peel the shallot and dice it finely as well.
  5. 5. Fold the shallot cubes into the quark.
  6. 6. Season the quark cream to taste with salt.
  7. 7. Trim the radishes and wash them thoroughly.
  8. 8. Slice the radishes as thinly as possible.
  9. 9. Spread the quark filling evenly onto the bread slices.
  10. 10. Coarsely crush the pepper using a mortar and pestle or a knife.
  11. 11. Sprinkle the crushed pepper over the topped breads.
  12. 12. Top the breads with the radish slices.
  13. 13. Garnish the dishes with fine rolls of chives.
  14. 14. Serve the breads immediately.
