🍽️ Creamy Radish and Potato Soup

Ingredients
- 3 bunches radishes (with leaves)
- 150 g mealy-cooking potatoes
- 1 shallot
- 2 tbsp butter
- 900 ml vegetable broth
- 100 g crème fraîche
- salt
- pepper (from the mill)
- nutmeg
Instructions
- 1. Wash the radishes thoroughly.
- 2. Set aside 10 radishes.
- 3. Roughly chop the remaining radishes including the greens.
- 4. Peel the potatoes.
- 5. Wash the potatoes.
- 6. Dice the potatoes roughly.
- 7. Peel the shallot.
- 8. Dice the shallot.
- 9. Heat the butter in a pot.
- 10. Sauté the shallots until translucent.
- 11. Add the potatoes to the pot.
- 12. Add the chopped radishes and greens to the pot.
- 13. Sweat the vegetables briefly.
- 14. Pour in the broth.
- 15. Bring the soup to a boil.
- 16. Reduce the heat.
- 17. Cover the pot.
- 18. Simmer the soup for 20 minutes.
- 19. Puree the soup with a hand blender.
- 20. Stir in the crème fraîche.
- 21. Season the soup with nutmeg.
- 22. Season the soup with salt.
- 23. Season the soup with pepper.
- 24. Slice 5 radishes into rounds.
- 25. Dice the remaining 5 radishes into fine cubes.
- 26. Stir the radish cubes into the soup.
- 27. Warm the plates.
- 28. Ladle the soup onto the warmed plates.
- 29. Garnish the soup with the radish slices.
- 30. Serve the soup.
