🍽️ Creamy Radish Soup

Ingredients
- 12 radishes
- 150 g radish leaves
- 200 g floury potatoes
- 1 shallot
- 1 garlic clove
- 2 tbsp butter
- 800 ml vegetable broth
- 2 tbsp soy cream
- salt
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the radishes and their leaves under running water.
- 2. Chop the green radish leaves into coarse pieces.
- 3. Take 3 to 4 radishes and slice them thinly or shave them into thin slices.
- 4. Dice the remaining radishes very finely.
- 5. Peel the potatoes and cut them into small cubes.
- 6. Peel the shallot and garlic and dice them finely as well.
- 7. Sauté the cut vegetables briefly in hot butter.
- 8. Add the potatoes and the radish leaves to the pan.
- 9. Pour in the vegetable broth.
- 10. Simmer the soup gently over low heat for about 15 minutes.
- 11. Puree the mixture until it is smooth.
- 12. Stir the soy cream into the soup.
- 13. Add the small radish cubes.
- 14. Season the soup to taste with salt and pepper.
- 15. Fill the soup into small bowls.
- 16. Garnish the bowls with the thin radish slices and serve.
