🥗 Fresh Radish Sprout Salad with Harzer Cheese

Ingredients
- 1 bunch radishes
- 1 small frisée lettuce
- 0.5 mini cucumber
- 1 red onion
- 2 tbsp sprouts (e.g. radish sprouts)
- 2 small gherkins
- 100 g Harzer cheese
- 3 tbsp light balsamic vinegar
- 2 tbsp classic vegetable broth
- salt
- pepper
- 2 tbsp olive oil
- 8 slices wholemeal baguette
Instructions
- 1. Thoroughly wash the radishes under running water.
- 2. Pat the radishes dry with a kitchen towel.
- 3. Slice the radishes into very thin rounds.
- 4. Carefully rinse the frisée (a type of curly endive) in a colander.
- 5. Spin the frisée dry in a salad spinner or pat it dry.
- 6. Tear the frisée leaves into bite-sized pieces.
- 7. Peel the cucumber completely.
- 8. Slice the peeled cucumber into thin rounds.
- 9. Peel the onion.
- 10. Halve the onion lengthwise.
- 11. Slice the onion halves into fine rings.
- 12. Rinse the radish sprouts under cold water in a colander.
- 13. Let the sprouts drain well.
- 14. Drain the gherkins (pickled cucumbers).
- 15. Finely chop the gherkins.
- 16. Cut the Harzer cheese into coarse cubes.
- 17. Add vinegar, vegetable broth, salt, pepper, and olive oil to a large salad bowl.
- 18. Whisk the dressing ingredients together thoroughly with a whisk.
- 19. Add the sliced radishes to the dressing mixture.
- 20. Add the onion rings to the bowl.
- 21. Add the cucumber slices to the bowl.
- 22. Add the finely chopped gherkins to the bowl.
- 23. Add the Harzer cheese cubes to the bowl.
- 24. Add the drained sprouts to the bowl.
- 25. Gently fold all ingredients together until evenly coated with the dressing.
- 26. Let the salad marinate for about 10 minutes.
- 27. Season the salad to taste with salt and pepper if needed.
- 28. Fold in the prepared frisée just before serving.
- 29. Serve the salad with whole wheat baguette.
