  1. 1. Thoroughly wash the radishes under running water.
  2. 2. Pat the radishes dry with a kitchen towel.
  3. 3. Slice the radishes into very thin rounds.
  4. 4. Carefully rinse the frisée (a type of curly endive) in a colander.
  5. 5. Spin the frisée dry in a salad spinner or pat it dry.
  6. 6. Tear the frisée leaves into bite-sized pieces.
  7. 7. Peel the cucumber completely.
  8. 8. Slice the peeled cucumber into thin rounds.
  9. 9. Peel the onion.
  10. 10. Halve the onion lengthwise.
  11. 11. Slice the onion halves into fine rings.
  12. 12. Rinse the radish sprouts under cold water in a colander.
  13. 13. Let the sprouts drain well.
  14. 14. Drain the gherkins (pickled cucumbers).
  15. 15. Finely chop the gherkins.
  16. 16. Cut the Harzer cheese into coarse cubes.
  17. 17. Add vinegar, vegetable broth, salt, pepper, and olive oil to a large salad bowl.
  18. 18. Whisk the dressing ingredients together thoroughly with a whisk.
  19. 19. Add the sliced radishes to the dressing mixture.
  20. 20. Add the onion rings to the bowl.
  21. 21. Add the cucumber slices to the bowl.
  22. 22. Add the finely chopped gherkins to the bowl.
  23. 23. Add the Harzer cheese cubes to the bowl.
  24. 24. Add the drained sprouts to the bowl.
  25. 25. Gently fold all ingredients together until evenly coated with the dressing.

  28. 28. Fold in the prepared frisée just before serving.
  29. 29. Serve the salad with whole wheat baguette.
