🍳 Matjes Tartare with Crispy Radishes

Ingredients
- 125 g matjes fillets (2 matjes fillets)
- 1 tsp pickled green peppercorns
- 250 g radishes (preferably organic radishes; 1 bunch)
- 30 g yogurt (3.5% fat)
- pepper
- 1 pinch sugar
- 100 g whole grain bread (2 slices)
Instructions
- 1. Gently pat the matjes fillets dry with kitchen paper.
- 2. Then dice the matjes fillets very finely.
- 3. Rinse the green peppercorns under running water in a sieve.
- 4. Let the peppercorns drain well in the sieve.
- 5. Wash the radishes thoroughly.
- 6. Remove the tough stems and the bottom end of the radishes.
- 7. Dice the radishes finely.
- 8. Add the radish cubes to the matjes mixture.
- 9. Shake the radish greens vigorously to remove excess water.
- 10. Carefully pluck the leaves from the stems.
- 11. Set aside a few nice leaves for decoration.
- 12. Finely chop the remaining part of the radish greens.
- 13. Chop the drained green peppercorns.
- 14. Add the chopped peppercorns to the matjes mixture.
- 15. Gently fold in the peppercorns.
- 16. Let the mixture infuse for ten minutes.
- 17. Add the chopped radish greens to the matjes mixture.
- 18. Stir the yogurt into the mixture.
- 19. Season the tartare with black pepper.
- 20. Season the tartare with a pinch of sugar.
- 21. Finally, adjust the taste of the mixture as needed.
- 22. Spread the matjes tartare onto the whole grain bread.
- 23. Decorate the bread with the reserved radish leaves.
