🍽️ Refreshing Cold Radish and Herb Soup

Ingredients
- 250 ml Buttermilk
- 3 tbsp Lemon juice
- 150 g Yogurt (1,5 % Fat)
- 100 ml Milk (1,5 % Fat)
- 20 g Cream horseradish (1 tbsp; Jar)
- Salt
- Pepper
- Nutmeg
- 200 g Radishes (1 bunch)
- 40 g mixed herbs (e.g. parsley, mint, basil, chives; 2 bunches)
Instructions
- 1. Mix buttermilk, lemon juice, yogurt, and milk in a bowl.
- 2. Add the horseradish and blend the mixture with an immersion blender until smooth.
- 3. Season the soup with salt, pepper, and freshly grated nutmeg to taste.
- 4. Wash the radishes and remove the green stems.
- 5. Cut the radishes into thin matchsticks or grate them finely.
- 6. Stir half of the prepared radishes into the cold soup.
- 7. Divide the soup onto two plates.
- 8. Wash the herbs and shake them dry.
- 9. Finely chop the herbs.
- 10. Sprinkle the chopped herbs over the soup.
- 11. Top the plates with the remaining radishes.
- 12. Add a pinch of freshly grated nutmeg to each serving.
