  2. 2. Pat the meat completely dry with kitchen paper.
  3. 3. Cut the meat into thin strips.
  4. 4. Place the meat strips in a bowl.
  5. 5. Heat the apple juice briefly together with the honey.
  6. 6. Stir until the honey is completely dissolved.
  7. 7. Pour the warm apple juice and honey mixture over the meat.
  8. 8. Cover the bowl and place it in the refrigerator for approx. 2 hours.
  9. 9. Peel the onion.
  10. 10. Finely chop the onion.
  11. 11. Clean the carrots.
  12. 12. Peel the carrots.
  13. 13. Cut the carrots into fine cubes.
  14. 14. Melt the butter or margarine in a pot.
  15. 15. Fry the chopped onion in the melted butter.
  16. 16. Add the carrot cubes.
  17. 17. Fry the vegetables for about 5 minutes.
  18. 18. Season the vegetables with salt and pepper.
  19. 19. Add about 100 milliliters of water.
  20. 20. Add the frozen peas.
  21. 21. Cover the pot.
  22. 22. Simmer the vegetables for another 15 minutes over medium heat.
  23. 23. Finally season the vegetables with salt, pepper, and a pinch of sugar.
  24. 24. Transfer the vegetables into a serving dish.
  25. 25. Place the marinated chicken meat in a separate serving dish.
  26. 26. Rinse the tarragon under cold water.
  27. 27. Shake the tarragon dry.
  28. 28. Pluck the leaves from the stems.
  29. 29. Finely chop the tarragon leaves.
  30. 30. Place the chopped leaves in a small bowl.
  31. 31. Remove the rind from the raclette cheese.
  32. 32. Cut the cheese into pieces roughly the size of a raclette pan.
  33. 33. Arrange the cheese pieces on a plate.
  34. 34. Preheat the raclette grill.
  35. 35. Place a few strips of marinated chicken meat into a raclette pan.
  36. 36. Fry the meat in the raclette grill.
  37. 37. Turn the meat occasionally until it is cooked.
  38. 38. Season the cooked meat with salt and pepper.
  39. 39. Add the prepared vegetables to the pan with the meat.
  40. 40. Sprinkle some chopped tarragon over it.
  41. 41. Place a piece of raclette cheese on top of the vegetables.
  42. 42. Broil the dish in the raclette grill until the cheese is melted.
