🍽️ Chicken Raclette with Apple Juice Marinade and Vegetables

Ingredients
- 600 g chicken breast fillet
- 125 ml apple juice
- 3 tbsp honey
- 1 onion
- 400 g carrots
- 2 tbsp butter
- salt
- white pepper (from the mill)
- 300 g frozen peas
- 1 pinch sugar
- 2 sprigs tarragon
- 400 g butter cheese
Instructions
- 1. Rinse the chicken meat under cold water.
- 2. Pat the meat completely dry with kitchen paper.
- 3. Cut the meat into thin strips.
- 4. Place the meat strips in a bowl.
- 5. Heat the apple juice briefly together with the honey.
- 6. Stir until the honey is completely dissolved.
- 7. Pour the warm apple juice and honey mixture over the meat.
- 8. Cover the bowl and place it in the refrigerator for approx. 2 hours.
- 9. Peel the onion.
- 10. Finely chop the onion.
- 11. Clean the carrots.
- 12. Peel the carrots.
- 13. Cut the carrots into fine cubes.
- 14. Melt the butter or margarine in a pot.
- 15. Fry the chopped onion in the melted butter.
- 16. Add the carrot cubes.
- 17. Fry the vegetables for about 5 minutes.
- 18. Season the vegetables with salt and pepper.
- 19. Add about 100 milliliters of water.
- 20. Add the frozen peas.
- 21. Cover the pot.
- 22. Simmer the vegetables for another 15 minutes over medium heat.
- 23. Finally season the vegetables with salt, pepper, and a pinch of sugar.
- 24. Transfer the vegetables into a serving dish.
- 25. Place the marinated chicken meat in a separate serving dish.
- 26. Rinse the tarragon under cold water.
- 27. Shake the tarragon dry.
- 28. Pluck the leaves from the stems.
- 29. Finely chop the tarragon leaves.
- 30. Place the chopped leaves in a small bowl.
- 31. Remove the rind from the raclette cheese.
- 32. Cut the cheese into pieces roughly the size of a raclette pan.
- 33. Arrange the cheese pieces on a plate.
- 34. Preheat the raclette grill.
- 35. Place a few strips of marinated chicken meat into a raclette pan.
- 36. Fry the meat in the raclette grill.
- 37. Turn the meat occasionally until it is cooked.
- 38. Season the cooked meat with salt and pepper.
- 39. Add the prepared vegetables to the pan with the meat.
- 40. Sprinkle some chopped tarragon over it.
- 41. Place a piece of raclette cheese on top of the vegetables.
- 42. Broil the dish in the raclette grill until the cheese is melted.
