🍰 Homemade Quince Paste

Ingredients
- 1 kg quinces
- 1 vanilla pod
- sugar
Instructions
- 1. Peel the quinces and remove the core.
- 2. Cut the flesh into bite-sized pieces.
- 3. Place the quince pieces in a large pot.
- 4. Cover the fruit with water.
- 5. Add the vanilla pod to the pot.
- 6. Put the lid on the pot.
- 7. Cook the quinces until soft for 40 minutes with the pot covered.
- 8. Lift the soft quince pieces out of the pot with a slotted spoon.
- 9. Place them in a bowl.
- 10. Weigh the drained quinces.
- 11. Return them to the pot.
- 12. Add the same amount of sugar as the weight of the quinces.
- 13. Melt the sugar over low heat.
- 14. Stir gently while doing so.
- 15. Simmer the mixture for 1 hour.
- 16. Cook until it forms a coral-red paste.
- 17. Preheat the oven to 50 °C.
- 18. Line a baking tray with baking paper.
- 19. Spread the quince mixture evenly on the tray.
- 20. Smooth it out.
- 21. Bake the mixture in the oven for 1 hour.
- 22. Let the cubes cool down.
- 23. Cut them into pieces.
- 24. Store them in the refrigerator.
