  1. 1. Peel the quinces and remove the core.
  2. 2. Cut the flesh into bite-sized pieces.
  3. 3. Place the quince pieces in a large pot.
  4. 4. Cover the fruit with water.
  5. 5. Add the vanilla pod to the pot.
  6. 6. Put the lid on the pot.
  7. 7. Cook the quinces until soft for 40 minutes with the pot covered.
  8. 8. Lift the soft quince pieces out of the pot with a slotted spoon.
  9. 9. Place them in a bowl.
  10. 10. Weigh the drained quinces.
  11. 11. Return them to the pot.
  12. 12. Add the same amount of sugar as the weight of the quinces.
  13. 13. Melt the sugar over low heat.
  14. 14. Stir gently while doing so.
  15. 15. Simmer the mixture for 1 hour.
  16. 16. Cook until it forms a coral-red paste.
  17. 17. Preheat the oven to 50 °C.
  18. 18. Line a baking tray with baking paper.
  19. 19. Spread the quince mixture evenly on the tray.
  20. 20. Smooth it out.
  21. 21. Bake the mixture in the oven for 1 hour.
  22. 22. Let the cubes cool down.
  23. 23. Cut them into pieces.
  24. 24. Store them in the refrigerator.
