  1. 1. Fill a clean jar or bottle with water and place it in a pot.
  2. 2. Bring the water to a rolling boil to sterilize the container for about 10 to 15 minutes.
  3. 3. Thoroughly wash the quinces under running water.
  4. 4. Cut the fruits into quarters and remove the core.
  5. 5. Cut the flesh into small cubes.
  6. 6. Place the quince cubes into a cooking pot.
  7. 7. Cover the fruits completely with water.
  8. 8. Cook the quinces over low heat for 40 minutes until they are soft.
  9. 9. Place the cooked fruits along with the cooking liquid into a clean cloth.
  10. 10. Hang the cloth over another container and squeeze out the juice well.
  11. 11. Pour the collected juice back into the pot.
  12. 12. Add the spices and the cane sugar.
  13. 13. Bring the mixture to a boil.
  14. 14. Continue to boil the syrup for 15 to 20 minutes.
  15. 15. Strain the finished syrup through a fine mesh sieve once more.
  16. 16. Pour the warm syrup into a sealable bottle or a sterilized jar.
  17. 17. Allow the syrup to cool down.
  18. 18. Seal the container tightly.
