🍽️ Homemade Quince Puree

Ingredients
- 1 kg quinces
- 250 ml apple juice
- 1 lemon (juice)
- 100 g honey
- 1 piece cinnamon stick
- 2 star anise
Instructions
- 1. Wash the quinces thoroughly and dry them with a cloth.
- 2. Cut the fruits into four quarters.
- 3. Remove the hard core from each quarter.
- 4. Cut the fruit flesh into small pieces.
- 5. Place the quince pieces into a large pot.
- 6. Pour the apple juice over the fruit.
- 7. Add the lemon juice.
- 8. Stir in the honey.
- 9. Sprinkle cinnamon and anise into the pot.
- 10. Bring the mixture to a boil while stirring.
- 11. Reduce the heat and cover the pot.
- 12. Simmer the puree on low heat for about 45 minutes.
- 13. Check periodically to see if the fruits are soft.
- 14. Add a little water if the mixture becomes too dry.
- 15. Stir the puree occasionally to prevent burning.
- 16. Remove the pot from the heat once the quinces are soft.
- 17. Remove the spice sticks or seeds from the puree.
- 18. Press the puree through a fine sieve to make it smooth.
- 19. Fill the finished puree into clean, sterile jars.
- 20. Seal the jars tightly.
- 21. You can now preserve the jars or enjoy the puree fresh.
