  1. 1. Wash the quinces thoroughly and dry them with a cloth.
  2. 2. Cut the fruits into four quarters.
  3. 3. Remove the hard core from each quarter.
  4. 4. Cut the fruit flesh into small pieces.
  5. 5. Place the quince pieces into a large pot.
  6. 6. Pour the apple juice over the fruit.
  7. 7. Add the lemon juice.
  8. 8. Stir in the honey.
  9. 9. Sprinkle cinnamon and anise into the pot.
  10. 10. Bring the mixture to a boil while stirring.
  11. 11. Reduce the heat and cover the pot.
  12. 12. Simmer the puree on low heat for about 45 minutes.
  13. 13. Check periodically to see if the fruits are soft.
  14. 14. Add a little water if the mixture becomes too dry.
  15. 15. Stir the puree occasionally to prevent burning.
  16. 16. Remove the pot from the heat once the quinces are soft.
  17. 17. Remove the spice sticks or seeds from the puree.
  18. 18. Press the puree through a fine sieve to make it smooth.
  19. 19. Fill the finished puree into clean, sterile jars.
  20. 20. Seal the jars tightly.
  21. 21. You can now preserve the jars or enjoy the puree fresh.
