🍽️ Quince Jam with Orange Flavor

Ingredients
- 1 tsp coriander seeds
- 2.5 kg quinces
- 5 oranges (1 unwaxed)
- 500 g jam sugar (2:1)
- 15 g apple pectin
Instructions
- 1. Toast the coriander seeds in a non-stick pan without oil until fragrant. Remove them and crush them finely in a mortar.
- 2. Wash the quinces and brush off the fuzzy skin. Cut the fruits into quarters, remove the core, and chop the flesh into small pieces.
- 3. Juice the quince pieces and measure out approx. 700 ml of juice.
- 4. Wash the unwaxed orange in hot water, dry it, and finely grate the zest.
- 5. Juice the remaining oranges and measure out approx. 300 ml of juice.
- 6. Combine both juices and the orange zest in a pot and heat the mixture to 50°C.
- 7. Stir in the sugar, the ground coriander, and the pectin (gelling agent).
- 8. Bring the mixture to a boil while stirring and let it bubble vigorously for approx. 4 minutes.
- 9. Perform a gel test to check the consistency.
- 10. Fill the hot jam into the prepared jars up to the rim.
- 11. Turn the sealed jars upside down and let them cool.
