  1. 1. Toast the coriander seeds in a non-stick pan without oil until fragrant. Remove them and crush them finely in a mortar.
  2. 2. Wash the quinces and brush off the fuzzy skin. Cut the fruits into quarters, remove the core, and chop the flesh into small pieces.
  3. 3. Juice the quince pieces and measure out approx. 700 ml of juice.
  4. 4. Wash the unwaxed orange in hot water, dry it, and finely grate the zest.
  5. 5. Juice the remaining oranges and measure out approx. 300 ml of juice.
  6. 6. Combine both juices and the orange zest in a pot and heat the mixture to 50°C.
  7. 7. Stir in the sugar, the ground coriander, and the pectin (gelling agent).
  8. 8. Bring the mixture to a boil while stirring and let it bubble vigorously for approx. 4 minutes.
  9. 9. Perform a gel test to check the consistency.
  10. 10. Fill the hot jam into the prepared jars up to the rim.
  11. 11. Turn the sealed jars upside down and let them cool.
