  2. 2. Remove the blossom end and the stem base from the fruits.
  3. 3. Cut the quinces into eight equal pieces.
  4. 4. Bring the lemon juice together with 1.25 liters of water to a boil in a pot.
  5. 5. Add the quince pieces to the boiling water.
  6. 6. Simmer the fruits under a lid for 40 minutes.
  7. 7. Let the quinces cool down completely after cooking.
  8. 8. Let the cooled quinces drain well.
  9. 9. Squeeze the fruit pulp through a clean cloth to extract the juice.
  10. 10. Catch the escaping juice in a container.
  11. 11. Measure exactly 1 liter of quince juice.
  12. 12. Stir the sugar into the measured quince juice.
  13. 13. Boil the sugar-juice mixture for 4 minutes.
  14. 14. Set the pot aside to let the mixture cool down slightly.
  15. 15. Dissolve the gelatin in cold water.
  16. 16. Stir the dissolved gelatin thoroughly into the cooled quince mixture.
  17. 17. Pour the entire mixture into a shallow dish.
  18. 18. Cover the dish and place it in the refrigerator.
  19. 19. Let the mixture set (gel) in the refrigerator.
  20. 20. Cut the set mass into small cubes for serving.
  21. 21. Roll the quince cubes in powdered sugar.
