Ingredients
- 1 kg quinces
- lemons
- 1 kg sugar
- 16 sheets gelatin
Instructions
- 1. Wipe the quinces clean with a cloth.
- 2. Remove the blossom end and the stem base from the fruits.
- 3. Cut the quinces into eight equal pieces.
- 4. Bring the lemon juice together with 1.25 liters of water to a boil in a pot.
- 5. Add the quince pieces to the boiling water.
- 6. Simmer the fruits under a lid for 40 minutes.
- 7. Let the quinces cool down completely after cooking.
- 8. Let the cooled quinces drain well.
- 9. Squeeze the fruit pulp through a clean cloth to extract the juice.
- 10. Catch the escaping juice in a container.
- 11. Measure exactly 1 liter of quince juice.
- 12. Stir the sugar into the measured quince juice.
- 13. Boil the sugar-juice mixture for 4 minutes.
- 14. Set the pot aside to let the mixture cool down slightly.
- 15. Dissolve the gelatin in cold water.
- 16. Stir the dissolved gelatin thoroughly into the cooled quince mixture.
- 17. Pour the entire mixture into a shallow dish.
- 18. Cover the dish and place it in the refrigerator.
- 19. Let the mixture set (gel) in the refrigerator.
- 20. Cut the set mass into small cubes for serving.
- 21. Roll the quince cubes in powdered sugar.
