  1. 1. Rub the quinces with a kitchen towel to remove the white fuzz.
  2. 2. Wash the fruits thoroughly.
  3. 3. Remove the stem and the blossom end from each quince.
  4. 4. Cut the fruits into quarters.
  5. 5. Cut the quarters into small pieces.
  6. 6. Place the quince pieces in a pot.
  7. 7. Add water.
  8. 8. Bring the mixture to a boil.
  9. 9. Cook the quinces until they are soft.
  10. 10. Place the cooked fruits in a jelly bag.
  11. 11. Let the juice drip into a pot.
  12. 12. Take 1 liter of quince juice.
  13. 13. Briefly boil the juice with honey.
  14. 14. Add lemon juice.
  15. 15. Stir in the agar-agar powder. This is a plant-based gelling agent.
  16. 16. Bring the mixture to a boil again for about 2 minutes.
  17. 17. Fill the jelly into sterile jars.
  18. 18. Seal the jars well.
  19. 19. Place the jars upside down to cool.
