🍳 Fruity Quince Jelly with Orange Twist

Ingredients
- 1.5 kg quinces
- 1 lemon
- 200 ml orange juice
- 500 g jam sugar from raw cane sugar (2:1)
Instructions
- 1. Wash the quinces thoroughly and dry them with a clean cloth.
- 2. Remove the blossom end and the stem base from the fruits.
- 3. Cut the quinces, including the skin and core, into quarters.
- 4. Cut the quarters into smaller pieces.
- 5. Squeeze the lemon to extract the juice.
- 6. Pour the lemon juice into 1 1/4 liters of water.
- 7. Bring the water-lemon mixture to a boil.
- 8. Add the quince pieces to the boiling water.
- 9. Place a lid on the pot.
- 10. Cook the quinces over low heat for about 40 minutes.
- 11. Let the cooked quinces cool down completely.
- 12. Line a sieve with a cloth.
- 13. Pour the quinces and the liquid through the lined sieve.
- 14. Press the quince pieces through the cloth to extract the juice.
- 15. Collect the drained juice in a container.
- 16. Measure exactly 800 ml of quince juice.
- 17. Add orange juice and jam sugar to the quince juice.
- 18. Boil the mixture vigorously for four minutes.
- 19. Skim off the rising foam while cooking.
- 20. Skim off any remaining foam after cooking.
- 21. Rinse the jars with hot water.
- 22. Fill the hot jelly into the pre-warmed jars.
- 23. Seal the jars tightly with the lids.
- 24. Place the sealed jars upside down.
- 25. Let the jars cool upside down for 20 minutes.
- 26. Turn the jars back over after 20 minutes.
- 27. Let the jars cool down completely.
