  1. 1. Wash the quinces thoroughly and dry them with a clean cloth.
  2. 2. Remove the blossom end and the stem base from the fruits.
  3. 3. Cut the quinces, including the skin and core, into quarters.
  4. 4. Cut the quarters into smaller pieces.
  5. 5. Squeeze the lemon to extract the juice.
  6. 6. Pour the lemon juice into 1 1/4 liters of water.
  7. 7. Bring the water-lemon mixture to a boil.
  8. 8. Add the quince pieces to the boiling water.
  9. 9. Place a lid on the pot.
  10. 10. Cook the quinces over low heat for about 40 minutes.
  11. 11. Let the cooked quinces cool down completely.
  12. 12. Line a sieve with a cloth.
  13. 13. Pour the quinces and the liquid through the lined sieve.
  14. 14. Press the quince pieces through the cloth to extract the juice.
  15. 15. Collect the drained juice in a container.
  16. 16. Measure exactly 800 ml of quince juice.
  17. 17. Add orange juice and jam sugar to the quince juice.
  18. 18. Boil the mixture vigorously for four minutes.
  19. 19. Skim off the rising foam while cooking.
  20. 20. Skim off any remaining foam after cooking.
  21. 21. Rinse the jars with hot water.
  22. 22. Fill the hot jelly into the pre-warmed jars.
  23. 23. Seal the jars tightly with the lids.
  24. 24. Place the sealed jars upside down.
  25. 25. Let the jars cool upside down for 20 minutes.
  26. 26. Turn the jars back over after 20 minutes.
  27. 27. Let the jars cool down completely.
