  1. 1. Turn on the oven and set it to 160 degrees Celsius with top and bottom heat.
  2. 2. Cut the quinces and apples into quarters and remove the seeds.
  3. 3. Place the fruit on a baking sheet lined with baking paper.
  4. 4. Bake the fruit in the preheated oven for 1 hour.
  5. 5. Remove the baking sheet from the oven and let the fruit cool down.
  6. 6. Peel the cooled apples and quinces.
  7. 7. Remove any remaining core parts from the fruit.
  8. 8. Cut the fruit into small pieces.
  9. 9. Puree the fruit pieces into a smooth mash.
  10. 10. Mix the puree with the jam sugar.
  11. 11. Heat the mixture in a pot.
  12. 12. Let the mixture simmer for 5 minutes.
  13. 13. Line a new baking sheet with baking paper.
  14. 14. Spread the fruit mixture evenly 1 cm thick onto the sheet.
  15. 15. Let the mixture dry for 2 to 3 days.
  16. 16. Cut the dried quince bread into bite-sized diamonds.
  17. 17. Toss the pieces in caster sugar.
  18. 18. Store the quince bread in an airtight container.
