🍰 Homemade Quince Bread with Brown Sugar

Ingredients
- 1 kg quinces
- 750 ml water
- 500 g sugar
- 40 g raw cane sugar
Instructions
- 1. Wash the quinces thoroughly and dry them with a cloth.
- 2. Remove the stem and the dried flower end at the bottom.
- 3. Cut the quinces into coarse cubes, including the hard core for more flavor.
- 4. Place the quince pieces in a large pot and pour in 750 ml of water.
- 5. Cover the pot and bring the water to a boil.
- 6. Let the quinces cook soft over medium heat for about 45 minutes.
- 7. Line a fine sieve with a clean kitchen towel.
- 8. Pour the cooked quinces into the sieve to catch the juice.
- 9. Remove the core from the quince pieces.
- 10. Puree the flesh with a hand blender until smooth.
- 11. Weigh out 500 g of quince puree.
- 12. Place the quince puree in a pot and add 500 g of sugar.
- 13. Cook the mixture over medium heat, stirring constantly.
- 14. Let the mixture reduce for about 60 minutes until it becomes thick and sticky.
- 15. Spread the quince mixture thinly onto a baking sheet lined with baking paper.
- 16. Dry the bread at room temperature for several days.
- 17. Alternatively, dry it in the oven with the light on for about 6 hours.
- 18. Cut the dried quince bread into about 40 rectangles.
- 19. Roll the rectangles in brown sugar.
- 20. Store the quince bread in a tin, separated by layers of parchment paper.
