  1. 1. Wash the quinces and cut them into quarters.
  2. 2. Remove the skin and the hard core from each piece.
  3. 3. Chop the soft flesh into very small cubes.
  4. 4. Place the quince cubes, the ginger, one tablespoon of ginger syrup, and the orange juice into a pot.
  5. 5. Bring the ingredients to a boil on the stove.
  6. 6. Blend the hot mixture with a hand blender until it is very fine and smooth.
  7. 7. Let the quince puree cool down completely in the pot.
  8. 8. Stir the cooled mixture thoroughly with the jam sugar and the citric acid.
  9. 9. Bring the sweet mixture back to a boil.
  10. 10. Let it simmer for 6 to 10 minutes while stirring constantly.
  11. 11. Perform a gel test to ensure the mixture sets properly.
  12. 12. Pour the finished mixture into a shallow baking pan measuring 30 by 20 centimeters.
  13. 13. Smooth the surface completely with a spoon or spatula.
  14. 14. Let the quince loaf cool down completely at room temperature.
  15. 15. Sprinkle the surface with chopped pistachios as desired.
  16. 16. Let the bread dry in the air for about two days.
  17. 17. Cut the dried bread into small diamond-shaped pieces.
