🍽️ Quince Loaf with Ginger and Orange

Ingredients
- 1 kg quinces
- 2 tbsp ginger piece (pickled in syrup)
- 2 oranges (juiced)
- 500 g jam sugar (3:1)
- 1 packet citric acid
- 40 g chopped pistachios
Instructions
- 1. Wash the quinces and cut them into quarters.
- 2. Remove the skin and the hard core from each piece.
- 3. Chop the soft flesh into very small cubes.
- 4. Place the quince cubes, the ginger, one tablespoon of ginger syrup, and the orange juice into a pot.
- 5. Bring the ingredients to a boil on the stove.
- 6. Blend the hot mixture with a hand blender until it is very fine and smooth.
- 7. Let the quince puree cool down completely in the pot.
- 8. Stir the cooled mixture thoroughly with the jam sugar and the citric acid.
- 9. Bring the sweet mixture back to a boil.
- 10. Let it simmer for 6 to 10 minutes while stirring constantly.
- 11. Perform a gel test to ensure the mixture sets properly.
- 12. Pour the finished mixture into a shallow baking pan measuring 30 by 20 centimeters.
- 13. Smooth the surface completely with a spoon or spatula.
- 14. Let the quince loaf cool down completely at room temperature.
- 15. Sprinkle the surface with chopped pistachios as desired.
- 16. Let the bread dry in the air for about two days.
- 17. Cut the dried bread into small diamond-shaped pieces.
