🍽️ Quinoa Apple Salad

Ingredients
- 150 g Quinoa
- 450 ml vegetable broth
- 4 tbsp lemon juice
- 2 tbsp white wine vinegar
- salt
- white pepper
- 1 tsp honey
- 0.5 tsp mustard
- 2 tbsp olive oil
- 2 carrots
- 1 apple
- 2 spring onions
- 1 small romaine lettuce
- 1 handful herbs (5 g; parsley, dill)
- 2 tbsp sunflower seeds (30 g)
Instructions
- 1. Rinse the quinoa grains under running water in a sieve.
- 2. Place the drained quinoa in a pot with boiling vegetable broth.
- 3. Cook the quinoa on low heat for about 15 minutes.
- 4. Remove the pot from the heat and let the quinoa cool down completely.
- 5. Whisk lemon juice, vinegar, salt, pepper, honey, mustard, and oil together in a small bowl to make a dressing.
- 6. Peel the carrots and then wash them.
- 7. Grate the carrots finely using a grater.
- 8. Wash the apple and remove the core.
- 9. Cut the apple into thin strips.
- 10. Mix the grated carrots and apple strips with the prepared dressing.
- 11. Clean the spring onions and wash them.
- 12. Slice the spring onions into thin rings or chop them finely.
- 13. Wash the salad greens and cut them into thin strips.
- 14. Wash the herbs and shake off excess water.
- 15. Tear the herbs into small pieces.
- 16. Fluff the cooled quinoa with a fork.
- 17. Gently fold the quinoa with the carrots, spring onions, apple strips, and salad strips.
- 18. Season the salad once more with salt and pepper.
- 19. Divide the salad onto plates.
- 20. Garnish the salad with the herbs and seeds.
