  1. 1. Rinse the quinoa grains under cold water.
  2. 2. Place the quinoa in a pot and cover it with twice as much water.
  3. 3. Bring the water to a boil.
  4. 4. Reduce the heat to low and cook the quinoa for about 10 minutes.
  5. 5. Peel the mango and cut the flesh off the pit.
  6. 6. Cut the mango flesh into small cubes.
  7. 7. Wash the cucumber, tomatoes, and bell pepper.
  8. 8. Remove the tough parts of the vegetables and cut them into bite-sized pieces.
  9. 9. Wash the lamb's lettuce.
  10. 10. Spin the salad dry.
  11. 11. Peel the onion.
  12. 12. Finely chop the onion.
  13. 13. Wash the mint and shake it dry.
  14. 14. Pluck the mint leaves from the stems.
  15. 15. Cut the mint leaves into thin strips.
  16. 16. Cut the feta cheese into cubes.
  17. 17. Drain the cooked quinoa.
  18. 18. Let the quinoa drain well.
  19. 19. Place the quinoa in a large bowl.
  20. 20. Add the mango, cucumber, tomatoes, bell pepper, lamb's lettuce, onion, mint, and feta to the bowl.
  21. 21. Mix all ingredients well together.
  22. 22. Drizzle olive oil over the salad.
  23. 23. Add apple cider vinegar.
  24. 24. Season with salt and pepper to taste.
