🍽️ Fresh Quinoa Mango Salad

Ingredients
- 200 g quinoa
- 1 mango
- 1 cucumber
- 3 tomatoes
- 1 red bell pepper
- 150 g lamb's lettuce
- 1 red onion
- 2 sprigs mint
- 150 g feta (45 % fat in dry matter)
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- salt
- pepper
Instructions
- 1. Rinse the quinoa grains under cold water.
- 2. Place the quinoa in a pot and cover it with twice as much water.
- 3. Bring the water to a boil.
- 4. Reduce the heat to low and cook the quinoa for about 10 minutes.
- 5. Peel the mango and cut the flesh off the pit.
- 6. Cut the mango flesh into small cubes.
- 7. Wash the cucumber, tomatoes, and bell pepper.
- 8. Remove the tough parts of the vegetables and cut them into bite-sized pieces.
- 9. Wash the lamb's lettuce.
- 10. Spin the salad dry.
- 11. Peel the onion.
- 12. Finely chop the onion.
- 13. Wash the mint and shake it dry.
- 14. Pluck the mint leaves from the stems.
- 15. Cut the mint leaves into thin strips.
- 16. Cut the feta cheese into cubes.
- 17. Drain the cooked quinoa.
- 18. Let the quinoa drain well.
- 19. Place the quinoa in a large bowl.
- 20. Add the mango, cucumber, tomatoes, bell pepper, lamb's lettuce, onion, mint, and feta to the bowl.
- 21. Mix all ingredients well together.
- 22. Drizzle olive oil over the salad.
- 23. Add apple cider vinegar.
- 24. Season with salt and pepper to taste.
