🍽️ Fresh Quinoa Vegetable Salad

Ingredients
- 175 g quinoa
- 1 onion
- bell peppers (1 red and 1 yellow each)
- 1 cucumber
- 1 zucchini
- 80 g olives
- 2 tbsp parsley
- 1 garlic clove
- 3 tbsp orange juice
- 5 tbsp lemon juice
- 5 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Bring a pot of salted water to a boil. Add the quinoa, reduce the heat, and let it simmer for 15 minutes. Then drain the water.
- 2. Peel the onion and cut it into small cubes.
- 3. Wash the bell pepper, halve it, and remove the seeds and stem base. Then cut the flesh into 1 cm cubes.
- 4. Wash the cucumber and slice it.
- 5. Wash the zucchini, trim the hard ends, and cut it into small pieces.
- 6. Slice the olives.
- 7. Mix all prepared ingredients with chopped parsley, olive oil, orange juice, and lemon juice. Peel the garlic and press it into the mixture. Season everything generously with salt and pepper.
