🍽️ Crunchy Quiche with Cherry Tomatoes, Bacon, and Pine Nuts

Ingredients
- 75 g spinach leaves
- 1 tbsp butter
- salt
- pepper (from the mill)
- 250 g cherry tomatoes
- 40 g pine nuts
- 120 g bacon cubes
- 8 eggs
- 50 ml milk
- 400 g puff pastry
- flour (for the work surface)
Instructions
- 1. Wash the spinach thoroughly and remove any tough stems.
- 2. Heat the butter in a pot.
- 3. Add the spinach to the hot butter and stir until it wilts.
- 4. Season the spinach with salt and pepper.
- 5. Squeeze out any excess water from the spinach and let it drain.
- 6. Wash the cherry tomatoes.
- 7. Roast the pine nuts in a dry pan until they are fragrant.
- 8. Remove the roasted pine nuts from the pan and set them aside.
- 9. Render the bacon in the same pan until it is crispy.
- 10. Whisk the eggs and milk together in a bowl.
- 11. Season the egg mixture with salt and pepper.
- 12. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 13. Lightly flour a work surface.
- 14. Roll out the puff pastry into a round that fits your baking dish.
- 15. Line the baking dish with baking paper.
- 16. Place the dough in the dish and press it firmly against the edges.
- 17. Spread the prepared spinach over the dough base.
- 18. Distribute the bacon evenly over the spinach.
- 19. Place the cherry tomatoes on top of the quiche.
- 20. Pour the egg mixture over all the ingredients.
- 21. Sprinkle the roasted pine nuts over the top.
- 22. Bake the quiche in the oven for about 35 minutes.
