Ingredients
- 125 g Butter

- 400 g flat green beans
- 4 eggs
- 75 g grated Emmental
- 300 ml whipping cream
- salt
- pepper (from the mill)
- leek strips (for garnishing)
Instructions
- 1. Put the butter, 1 teaspoon of salt, the flour, and 50 milliliters of cold water into a bowl.
- 2. Knead the ingredients quickly into a smooth dough.
- 3. Shape the dough into a ball.
- 4. Wrap the dough ball in cling film.
- 5. Put the foil in the refrigerator for 1 hour.
- 6. Wash the flat green beans under running water.
- 7. Remove the hard ends of the beans.
- 8. Cut the beans diagonally into short pieces.
- 9. Bring water to a boil and add some salt.
- 10. Cook the beans for 5 minutes in the boiling salted water (blanch).
- 11. Immediately dip the beans in ice water to stop the cooking process.
- 12. Let the beans drain well.
- 13. Whisk the eggs in a separate bowl.
- 14. Stir the cheese and cream into the eggs.
- 15. Season the mixture with salt and pepper.
- 16. Grease a springform pan with a diameter of 28 centimeters with butter.
- 17. Sprinkle some flour into the greased pan.
- 18. Take the dough out of the refrigerator.
- 19. Place the dough into the prepared pan.
- 20. Press the dough up at the edges to form a crust.
- 21. Preheat the oven to 180 degrees top and bottom heat.
- 22. Cut a round piece of parchment paper to the size of the pan.
- 23. Place the parchment paper on the dough base.
- 24. Distribute the prepared beans on the parchment paper.
- 25. Bake the base for about 10 minutes in the preheated oven (blind bake).
- 26. Take the pan out of the oven.
- 27. Remove the parchment paper together with the beans.
- 28. Distribute the beans evenly on the pre-baked base.
- 29. Pour the egg-cream mixture over the beans.
- 30. Finish baking the quiche for about 45 minutes.
- 31. Cut leek into thin strips.
- 32. Decorate the finished quiche with the leek strips.
