🍽️ Smashed Potatoes with Vegetables

Ingredients
- 800 g potatoes (8 potatoes)
- salt
- 150 g cherry tomatoes
- 2 beetroot bulbs
- 2 spring onions
- 100 g Gouda block (45 % fat in dry matter)
- 2 tbsp olive oil
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Place the potatoes in a pot with salted water.
- 3. Boil the potatoes for 20 minutes until they are tender.
- 4. Remove the pot from the heat and drain the water.
- 5. Rinse the potatoes briefly with cold water.
- 6. Let the potatoes drain well.
- 7. Wash the tomatoes.
- 8. Slice the tomatoes.
- 9. Peel the beetroot.
- 10. Slice the beetroot into thin slices.
- 11. Trim the ends of the spring onions.
- 12. Wash the spring onions.
- 13. Chop the spring onions into small rings.
- 14. Grate the Gouda cheese.
- 15. Line a baking sheet with parchment paper.
- 16. Place the potatoes on the baking sheet.
- 17. Flatten each potato using a potato masher.
- 18. Make sure the potatoes are about 1 cm thick.
- 19. Brush the potatoes with oil.
- 20. Place the tomato slices on the potatoes.
- 21. Place the beetroot slices on the potatoes.
- 22. Sprinkle the spring onions over the top.
- 23. Sprinkle the Gouda cheese over the top.
- 24. Preheat the oven to 200 °C (convection 180 °C or gas mark 3).
- 25. Place the baking sheet in the oven.
- 26. Bake the dish for about 25 minutes.
