  1. 1. Mix the sugar with the egg and egg yolks in a bowl. Stir the ingredients vigorously, but do not whisk the mixture until it becomes fluffy.
  2. 2. Bring the milk to a boil in a saucepan together with the split vanilla pod.
  3. 3. Pour the hot milk slowly into the egg mixture. Stir constantly to ensure the liquids combine well.
  4. 4. Put the sugar with a little water into a small saucepan. Let the mixture simmer until the sugar caramelizes to a golden brown color.
  5. 5. Pour the hot caramel sauce immediately into the lightly greased molds. Ensure that a layer about 3 millimeters thick forms at the bottom.
  6. 6. Strain the egg-milk mixture through a fine sieve into the molds. The sieve removes any lumps for a smooth texture.
  7. 7. Fill a large baking dish with about 1 to 2 centimeters of hot water. Place the molds with the flan mixture into the water bath.
  8. 8. Bake the vanilla flan in the oven at 180 degrees for about 30 minutes. The flan is done when it is set.
  9. 9. Let the flan cool completely before serving.
  10. 10. Carefully loosen the flan from the sides of the molds with a sharp knife. Turn the flan out onto a plate so that the caramel is on top.
  11. 11. Garnish the flan as desired with lemon leaves and lemon zest.
