  1. 1. Sift the flour into a large mixing bowl.
  2. 2. Add the egg, egg yolk, salt, and melted butter.
  3. 3. Add the water gradually and knead everything into a smooth dough.
  4. 4. Knead the dough vigorously on a floured work surface for about 10 minutes.
  5. 5. Slap the dough firmly against the work surface repeatedly while kneading.
  6. 6. Shape the dough into a ball.
  7. 7. Brush the ball with a little oil.
  8. 8. Wrap the dough ball in cling film.
  9. 9. Let the dough rest for one hour at room temperature.
  10. 10. Divide the dough into two equal pieces.
  11. 11. Place a large cloth on the table.
  12. 12. Dust the cloth evenly with flour.
  13. 13. Take one dough ball and roll it out as thinly as possible.
  14. 14. Gently stretch the dough further with your hands.
  15. 15. Alternatively, stretch the dough over your floured knuckles.
  16. 16. The dough should be about 30 by 40 centimeters in size.
  17. 17. Brush the entire dough with melted liquid butter.
  18. 18. Sprinkle about two tablespoons of breadcrumbs onto the dough.
  19. 19. Mix all ingredients for the quark filling in a bowl.
  20. 20. Spread half of the quark filling onto the dough.
  21. 21. Leave about three centimeters free at the edges.
  22. 22. Lift the cloth and roll up the strudel.
  23. 23. Slide the strudel into the greased pan with the seam side down.
  24. 24. Make a second strudel with the remaining ingredients.
  25. 25. Place the second strudel next to the first one in the pan.
  26. 26. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  27. 27. Whisk milk, egg yolk, sugar, lemon zest, and vanilla sugar for the glaze.
  28. 28. Pour the glaze to the sides of the strudels.
  29. 29. Brush the surfaces with the remaining melted butter.
  30. 30. Bake the strudels in the preheated oven for about 40 minutes.
  31. 31. Remove the finished strudel from the oven.
  32. 32. Let the strudel cool down.
  33. 33. Serve the strudel lukewarm or cooled.
  34. 34. Dust the strudel with powdered sugar if desired.
