🍽️ Crispy Quark Strudel

Ingredients
- 500 g flour
- 1 egg
- 1 egg yolk
- 2 pinch salt
- 100 g melted butter
- 250 ml lukewarm water
- 4 tbsp sunflower oil
- flour (for working)
- butter (for brushing)
- 4 tbsp breadcrumbs
- 500 g quark (well drained in a sieve)
- 100 g sugar
- 40 g melted butter
- 2 eggs
- 2 organic lemons (zested)
- 2 tbsp currants
- 125 ml milk
- 1 egg yolk
- 1 tbsp sugar
- 1 tbsp lemon zest
- 1 tbsp vanilla sugar
- powdered sugar (for dusting)
Instructions
- 1. Sift the flour into a large mixing bowl.
- 2. Add the egg, egg yolk, salt, and melted butter.
- 3. Add the water gradually and knead everything into a smooth dough.
- 4. Knead the dough vigorously on a floured work surface for about 10 minutes.
- 5. Slap the dough firmly against the work surface repeatedly while kneading.
- 6. Shape the dough into a ball.
- 7. Brush the ball with a little oil.
- 8. Wrap the dough ball in cling film.
- 9. Let the dough rest for one hour at room temperature.
- 10. Divide the dough into two equal pieces.
- 11. Place a large cloth on the table.
- 12. Dust the cloth evenly with flour.
- 13. Take one dough ball and roll it out as thinly as possible.
- 14. Gently stretch the dough further with your hands.
- 15. Alternatively, stretch the dough over your floured knuckles.
- 16. The dough should be about 30 by 40 centimeters in size.
- 17. Brush the entire dough with melted liquid butter.
- 18. Sprinkle about two tablespoons of breadcrumbs onto the dough.
- 19. Mix all ingredients for the quark filling in a bowl.
- 20. Spread half of the quark filling onto the dough.
- 21. Leave about three centimeters free at the edges.
- 22. Lift the cloth and roll up the strudel.
- 23. Slide the strudel into the greased pan with the seam side down.
- 24. Make a second strudel with the remaining ingredients.
- 25. Place the second strudel next to the first one in the pan.
- 26. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 27. Whisk milk, egg yolk, sugar, lemon zest, and vanilla sugar for the glaze.
- 28. Pour the glaze to the sides of the strudels.
- 29. Brush the surfaces with the remaining melted butter.
- 30. Bake the strudels in the preheated oven for about 40 minutes.
- 31. Remove the finished strudel from the oven.
- 32. Let the strudel cool down.
- 33. Serve the strudel lukewarm or cooled.
- 34. Dust the strudel with powdered sugar if desired.
