🍰 Crunchy Quark Apple Cake with Cinnamon Crumble

Ingredients
- 400 g flour
- 300 g sugar
- 1 egg
- 200 g soft butter
- 1 tsp cinnamon powder
- 3 tart apples (e.g. Boskop)
- 3 tbsp lemon juice
- 2 eggs
- 500 g quark
- 2 egg yolks
- 100 g semolina
- fat (for the pan)
Instructions
- 1. Pour the flour onto a clean work surface.
- 2. Make a well in the center and add 150 grams of sugar and the egg.
- 3. Cut the butter into small cubes and place them on the outer edge of the flour.
- 4. Quickly chop the ingredients with a knife until they are roughly combined.
- 5. Knead everything together with your hands until you have a smooth dough.
- 6. Divide the dough into two equal halves.
- 7. Mix the cinnamon into one half of the dough.
- 8. Shape both doughs into balls.
- 9. Wrap each ball individually in cling film.
- 10. Place the doughs in the refrigerator for 30 minutes.
- 11. Take out the half of the dough without cinnamon.
- 12. Lightly flour your work surface.
- 13. Roll out the dough flat.
- 14. Grease your cake pan.
- 15. Place the rolled-out dough into the pan.
- 16. Press the dough firmly against the edge of the pan.
- 17. Prick the bottom of the dough several times with a fork.
- 18. Wash the apples thoroughly.
- 19. Peel the apples.
- 20. Quarter the apples.
- 21. Remove the core.
- 22. Cut the apples into thin slices.
- 23. Squeeze lemon juice over the apple slices.
- 24. Separate the eggs: separate the yolk from the white.
- 25. Whisk the quark with the remaining sugar.
- 26. Add 4 egg yolks to the quark mixture.
- 27. Mix the semolina into the quark mixture.
- 28. Whip the egg whites until stiff.
- 29. Gently fold the whipped egg whites into the quark mixture.
- 30. Distribute the apple slices evenly over the dough base.
- 31. Pour the quark mixture over the apples.
- 32. Take out the cinnamon dough ball.
- 33. Rub the cinnamon dough into small crumbs using your fingers.
- 34. Sprinkle the crumbs evenly over the cake.
- 35. Preheat the oven (center, fan-forced 160 degrees).
- 36. Bake the cake for 50 to 60 minutes.
