🍽️ Fluffy Quark Stollen

Ingredients
- 2 cubes yeast
- 200 g sugar
- 0.25 l milk
- 800 g flour
- 50 g sugar
- 300 g butter
- 1 tsp orange zest
- 300 g quark
- 100 g rum raisins
- 100 g butter (liquid)
- powdered sugar
Instructions
- 1. Crumble the yeast into a small bowl.
- 2. Add 1 teaspoon of sugar, 50 milliliters of the milk, and 1 tablespoon of flour.
- 3. Mix the ingredients well together.
- 4. Cover the bowl and place it in a warm, draft-free spot.
- 5. Let the yeast mixture rise for 20 minutes.
- 6. Add the yeast mixture to a large bowl along with the remaining ingredients (except the raisins).
- 7. Knead the ingredients vigorously until a smooth dough forms.
- 8. Dust your work surface with a little flour.
- 9. Place the dough on the floured surface.
- 10. Work the dough vigorously with your hands for at least 15 to 20 minutes.
- 11. Return the dough to the bowl.
- 12. Cover the bowl and let the dough rise for at least 1 hour.
- 13. Wait until the volume of the dough has doubled.
- 14. Drain the rum raisins.
- 15. Divide the dough into two equal halves.
- 16. Shape each half into a stollen.
- 17. Place the stollen on a baking sheet lined with baking paper.
- 18. Let the stollen rise again for 1 hour.
- 19. Preheat the oven to 180 degrees Celsius.
- 20. Bake the stollen in the preheated oven for approx. 1 hour.
- 21. Brush the hot stollen immediately with butter.
- 22. Let the stollen cool down completely.
- 23. Dust the cooled stollen generously with powdered sugar.
