🍽️ Moist Quark Fruit Stollen

Ingredients
- 50 g orange peel
- 50 g lemon peel
- 50 g cranberries
- 50 g raisins
- 40 ml rum
- 400 g flour
- 1 tsp baking powder
- 100 g sugar
- 1 untreated lemon (zest)
- 200 g quark
- 200 g soft butter
- powdered sugar (for dusting)
Instructions
- 1. Finely chop the candied orange peel, candied lemon peel, cranberries, and raisins.
- 2. Place the chopped fruits into a bowl.
- 3. Pour the rum over the fruits.
- 4. Let the fruits soak for a while.
- 5. Preheat the oven to 160 degrees Celsius fan-assisted.
- 6. Mix the flour with the baking powder.
- 7. Pour the flour mixture onto your work surface.
- 8. Create a well in the center of the flour mound.
- 9. Add the sugar into the well.
- 10. Add the lemon zest into the well.
- 11. Add the quark (curd cheese) into the well.
- 12. Add 150 grams of butter into the well.
- 13. Roughly chop the ingredients using a dough scraper or knife.
- 14. Quickly knead all ingredients into a smooth dough.
- 15. Fold the soaked fruits into the dough.
- 16. Shape the dough into a stollen loaf.
- 17. Place the stollen on a baking sheet lined with baking paper.
- 18. Optionally wrap the stollen with a folded strip of aluminum foil to keep its shape.
- 19. Bake the stollen in the oven for about 1 hour.
- 20. Cover the stollen with aluminum foil if it starts to brown too much.
- 21. Take the stollen out of the oven.
- 22. Melt the remaining butter.
- 23. Brush the hot stollen with the melted butter.
- 24. Dust the stollen generously with powdered sugar.
- 25. Let the stollen cool down completely.
