  3. 3. Place the dishes in the freezer for a while to let them cool down.
  4. 4. Mix the quark, egg yolks, vanilla seeds, and lemon zest in a bowl.
  5. 5. Beat the egg whites with the sugar until stiff.
  6. 6. Stir the starch into the beaten egg whites.
  7. 7. Gently fold the egg whites into the quark mixture.
  8. 8. Fill the mixture into the prepared dishes.
  9. 9. Preheat the oven to 200 degrees.
  10. 10. Bake the soufflés for about 20 minutes.
  11. 11. Invert the finished soufflés onto plates after baking.
  12. 12. Dust the soufflés with powdered sugar.
  13. 13. Serve the soufflés garnished with raspberries and mint.
