Ingredients
- 200 g Quark (20 %)
- 3 Egg yolks
- Vanilla pods
- unpeeled Lemons (zest)
- 4 Egg whites
- 50 g Sugar
- Butter (for the ramekins)
- 1 tsp Cornstarch
- Icing sugar
- Raspberries
- Mint
Instructions
- 1. Thoroughly grease four small soufflé dishes with butter.
- 2. Coat the greased dishes with sugar.
- 3. Place the dishes in the freezer for a while to let them cool down.
- 4. Mix the quark, egg yolks, vanilla seeds, and lemon zest in a bowl.
- 5. Beat the egg whites with the sugar until stiff.
- 6. Stir the starch into the beaten egg whites.
- 7. Gently fold the egg whites into the quark mixture.
- 8. Fill the mixture into the prepared dishes.
- 9. Preheat the oven to 200 degrees.
- 10. Bake the soufflés for about 20 minutes.
- 11. Invert the finished soufflés onto plates after baking.
- 12. Dust the soufflés with powdered sugar.
- 13. Serve the soufflés garnished with raspberries and mint.
