🍰 Quark Soufflé with Berry Syrup

Ingredients
- 2 egg yolks
- 40 g powdered sugar
- 80 g quark
- 3 egg whites
- 30 g sugar
- 1 untreated lime (zest)
- butter (for the molds)
- sugar (for the molds)
- powdered sugar (for dusting)
- 150 ml red wine
- 50 g sugar
- 500 g mixed berries
- 1 packet vanilla sugar
- 2 cinnamon sticks
- chopped nuts (for garnish)
Instructions
- 1. Put wine, sugar, vanilla sugar, and 450 milliliters of water into a pot.
- 2. Bring the mixture to a boil on the stove.
- 3. Remove the pot from the heat.
- 4. Pour the hot liquid into a bowl.
- 5. Wash the berries thoroughly.
- 6. Remove the stems from the berries.
- 7. Sort through the berries and discard any spoiled fruit.
- 8. Add the prepared berries to the warm syrup.
- 9. Let the berries steep in the syrup for a short time.
- 10. Beat the egg yolks with the powdered sugar until creamy and pale.
- 11. Gently stir the drained quark into the egg yolk mixture.
- 12. Whip the egg whites until stiff.
- 13. Add the sugar while whipping the egg whites.
- 14. Continue whipping until the mixture is glossy and stable.
- 15. Fold the lime zest into the quark mixture.
- 16. Butter the ramekins (approx. 8 cm diameter).
- 17. Dust the ramekins with sugar.
- 18. Fill the ramekins with the quark mixture.
- 19. Preheat the oven to 190 degrees Celsius.
- 20. Place the ramekins in a water bath.
- 21. Bake the soufflés in the preheated oven for approx. 25 minutes.
- 22. Invert the finished soufflés onto plates.
- 23. Dust the soufflés with a little powdered sugar.
- 24. Serve the soufflés with the berry syrup.
