  1. 1. Put wine, sugar, vanilla sugar, and 450 milliliters of water into a pot.
  2. 2. Bring the mixture to a boil on the stove.
  3. 3. Remove the pot from the heat.
  4. 4. Pour the hot liquid into a bowl.
  5. 5. Wash the berries thoroughly.
  6. 6. Remove the stems from the berries.
  7. 7. Sort through the berries and discard any spoiled fruit.
  8. 8. Add the prepared berries to the warm syrup.
  9. 9. Let the berries steep in the syrup for a short time.
  10. 10. Beat the egg yolks with the powdered sugar until creamy and pale.
  11. 11. Gently stir the drained quark into the egg yolk mixture.
  12. 12. Whip the egg whites until stiff.
  13. 13. Add the sugar while whipping the egg whites.
  14. 14. Continue whipping until the mixture is glossy and stable.
  15. 15. Fold the lime zest into the quark mixture.
  16. 16. Butter the ramekins (approx. 8 cm diameter).
  17. 17. Dust the ramekins with sugar.
  18. 18. Fill the ramekins with the quark mixture.
  19. 19. Preheat the oven to 190 degrees Celsius.
  20. 20. Place the ramekins in a water bath.
  21. 21. Bake the soufflés in the preheated oven for approx. 25 minutes.
  22. 22. Invert the finished soufflés onto plates.
  23. 23. Dust the soufflés with a little powdered sugar.
  24. 24. Serve the soufflés with the berry syrup.
