🍰 Fluffy Quark Soufflé with Raisins

Ingredients
- soft butter (for the ramekins)
- sugar (for the ramekins)
- 2 tbsp raisins
- 20 ml orange liqueur
- 2 eggs
- 75 g sugar
- 100 g quark
- 0.5 tsp orange peel (untreated)
- 1 tsp flour
- powdered sugar (for dusting)
Instructions
- 1. Preheat the oven to 200 degrees Celsius using the top and bottom heat setting.
- 2. Grease four small soufflé dishes carefully with butter. Then dust them with sugar so the batter does not stick later.
- 3. Let the raisins soak in the liqueur to become soft.
- 4. Separate the eggs. Beat the egg yolks together with 50 grams of sugar until creamy and light.
- 5. Press the quark through a fine sieve to make it smooth. Stir the quark and the orange zest into the egg yolk mixture.
- 6. Gently fold the drained raisins into the quark mixture.
- 7. Beat the egg whites until stiff. Add the remaining sugar gradually until a firm snow-like mass forms.
- 8. Add about one third of the egg whites to the quark mixture and stir it in. Sift the flour over it and mix it in gently as well.
- 9. Fold in the remaining egg whites very gently to keep the mixture airy.
- 10. Fill the soufflé dishes three-quarters full with the batter. Clean the upper rim of the dishes of excess butter and sugar.
- 11. Bake the soufflés in the preheated oven for 10 to 15 minutes.
- 12. Dust the finished soufflés immediately with powdered sugar and serve them right away so they do not collapse.
