  1. 1. Preheat the oven to 200 degrees Celsius using the top and bottom heat setting.
  2. 2. Grease four small soufflé dishes carefully with butter. Then dust them with sugar so the batter does not stick later.
  3. 3. Let the raisins soak in the liqueur to become soft.
  4. 4. Separate the eggs. Beat the egg yolks together with 50 grams of sugar until creamy and light.
  5. 5. Press the quark through a fine sieve to make it smooth. Stir the quark and the orange zest into the egg yolk mixture.
  6. 6. Gently fold the drained raisins into the quark mixture.
  7. 7. Beat the egg whites until stiff. Add the remaining sugar gradually until a firm snow-like mass forms.
  8. 8. Add about one third of the egg whites to the quark mixture and stir it in. Sift the flour over it and mix it in gently as well.
  9. 9. Fold in the remaining egg whites very gently to keep the mixture airy.
  10. 10. Fill the soufflé dishes three-quarters full with the batter. Clean the upper rim of the dishes of excess butter and sugar.
  11. 11. Bake the soufflés in the preheated oven for 10 to 15 minutes.
  12. 12. Dust the finished soufflés immediately with powdered sugar and serve them right away so they do not collapse.
