🍰 Airy Quark Soufflé with Papaya

Ingredients
- 1 tbsp soft butter
- 140 g sugar
- 3 eggs
- 1 tsp lime zest
- 100 g low-fat quark
- 2 packets vanilla sugar
- 1 tbsp cornstarch
- 1 large papaya
- powdered sugar
Instructions
- 1. Fill your oven's roasting pan with about 2 cm of water.
- 2. Place the roasting pan on the bottom rack of the oven.
- 3. Preheat the oven to 180 degrees Celsius.
- 4. Brush 6 soufflé molds with the soft butter.
- 5. Sprinkle 1 tablespoon of sugar into each mold and swirl to coat.
- 6. Separate the eggs by carefully dividing the yolks from the whites.
- 7. Whip the egg whites until stiff, gradually pouring in half of the sugar.
- 8. Continue whipping until a firm, stable mass forms.
- 9. Whip the egg yolks with the lime zest and the remaining sugar until white and foamy.
- 10. Stir the quark cheese into the egg yolk mixture.
- 11. Gently fold the whipped egg whites into the quark mixture.
- 12. Divide the mixture evenly among the prepared molds.
- 13. Place the molds into the water bath inside the oven.
- 14. Bake the soufflés for about 20 minutes.
- 15. Do not open the oven door during baking.
- 16. Do not use convection (fan) mode, as it is not suitable.
- 17. Peel the papaya and remove the core.
- 18. Puree two-thirds of the fruit flesh with a little sugar.
- 19. Slice or grate the remaining papaya into thin pieces.
- 20. Remove the soufflés from the oven.
- 21. Plate the soufflés immediately.
- 22. Garnish them with the papaya slices and the puree.
- 23. Dust the soufflés with powdered sugar.
- 24. Serve the dish immediately.
