🍰 Quark Pancakes

Ingredients
- 130 g flour
- 1 egg yolk
- 2 eggs
- 120 ml milk
- 120 ml mineral water
- 2 tbsp butter
- 1 pinch salt
- butter (for frying)
- 150 g minced meat
- 1 tbsp butter
- 1 shallot
- 1 tbsp tomato paste
- 3 tbsp ketchup
- 1 can corn
- salt
- pepper
- 500 g cream quark
- 2 small bowls cress
- 1 small bowl watercress
- peppercorns
- mustard seeds
- juniper berry
- 1 piece red bell pepper
Instructions
- 1. Whisk flour, salt, eggs, and egg yolks in a bowl until smooth.
- 2. Add milk and sparkling water, stir in melted butter, and let the batter rest for one hour.
- 3. Heat butter in a non-stick pan.
- 4. Pour a small ladle of batter into the pan, spread it thinly by swirling, and cook until light brown.
- 5. Flip the crepes with a spatula or plate and cook the second side.
- 6. Cook twelve crepes this way and keep them warm in the oven.
- 7. Peel and finely chop the shallot.
- 8. Fry the minced meat in butter until crumbly, add the shallot, and cook until translucent.
- 9. Stir in tomato paste and ketchup, add 3-4 tablespoons of water.
- 10. Add the drained corn, mix everything, and season with salt and pepper.
- 11. Spread the filling on the pancakes, fold up the bottom edge, roll them up from the side, and place three pieces each on a plate with the seam side down.
- 12. Shape the pancakes as desired to look like Mama, Papa, and Child.
- 13. Mix one-third of the quark with 70% cocoa powder to make it dark brown and put it in a piping bag.
- 14. Fill the remaining quark into a second bag and cut a small corner off.
- 15. Pipe the white quark as feet onto the pancake figures.
- 16. Write on the upper edge of the plate with the brown quark.
