  1. 1. Spray 12 small, oval molds with baking release spray.
  2. 2. Soak the gelatin in cold water.
  3. 3. Heat 100 milliliters of cream with sugar, vanilla sugar, and lemon zest in a pot until it boils.
  4. 4. Remove the pot from the heat.
  5. 5. Squeeze the soaked gelatin well.
  6. 6. Add the gelatin to the hot cream and stir until it has completely dissolved.
  7. 7. Let the mixture cool down while stirring occasionally.
  8. 8. Remove the lemon zest from the cooled cream.
  9. 9. Stir the quark until creamy.
  10. 10. Take 2-3 tablespoons of the quark mixture and stir it into the cream.
  11. 11. Mix the cream-quark mixture with the remaining quark.
  12. 12. Whip the egg whites with lemon juice until stiff.
  13. 13. Whip the remaining cream until stiff as well.
  14. 14. Just before the cream starts to set, fold in the whipped cream into the quark mixture.
  15. 15. Gently fold in the egg whites into the mixture.
  16. 16. Fill the mousse into the prepared molds.
  17. 17. Peel the kiwi.
  18. 18. Cut the kiwi lengthwise into quarters.
  19. 19. Slice the kiwi quarters into thin slices.
  20. 20. Unmold the set quark mousse onto plates.
  21. 21. Arrange the kiwi slices on the mousse.
  22. 22. Garnish the dish with mint and serve.
