🍰 Fruity Quark-Yogurt Mousse with Kiwi

Ingredients
- 6 sheets gelatin
- 200 ml whipping cream
- 40 g sugar
- 2 tbsp vanilla sugar
- 1 piece untreated lemon peel
- 400 g quark
- 1 egg white
- 1 drop lemon juice
- mint (for garnishing)
Instructions
- 1. Spray 12 small, oval molds with baking release spray.
- 2. Soak the gelatin in cold water.
- 3. Heat 100 milliliters of cream with sugar, vanilla sugar, and lemon zest in a pot until it boils.
- 4. Remove the pot from the heat.
- 5. Squeeze the soaked gelatin well.
- 6. Add the gelatin to the hot cream and stir until it has completely dissolved.
- 7. Let the mixture cool down while stirring occasionally.
- 8. Remove the lemon zest from the cooled cream.
- 9. Stir the quark until creamy.
- 10. Take 2-3 tablespoons of the quark mixture and stir it into the cream.
- 11. Mix the cream-quark mixture with the remaining quark.
- 12. Whip the egg whites with lemon juice until stiff.
- 13. Whip the remaining cream until stiff as well.
- 14. Just before the cream starts to set, fold in the whipped cream into the quark mixture.
- 15. Gently fold in the egg whites into the mixture.
- 16. Fill the mousse into the prepared molds.
- 17. Peel the kiwi.
- 18. Cut the kiwi lengthwise into quarters.
- 19. Slice the kiwi quarters into thin slices.
- 20. Unmold the set quark mousse onto plates.
- 21. Arrange the kiwi slices on the mousse.
- 22. Garnish the dish with mint and serve.
