🍽️ Quark Dumplings with Pepper Vegetables

Ingredients
- 0.5 tsp pickled green peppercorns (jar)
- 250 g low-fat quark
- 10 g durum wheat semolina (1 tbsp)
- 20 g ground almond kernels (2 heaped tbsp)
- salt
- 400 g bell peppers (1 red and 1 yellow bell pepper each)
- 1 clove garlic
- 1 small onion
- 4 sprigs lemon thyme
- 100 ml classic vegetable broth
- 1 egg white
- 70 g cherry tomatoes
- pepper
Instructions
- 1. Place the peppercorns in a sieve and let them drain well.
- 2. Finely chop the peppercorns.
- 3. Mix the low-fat quark, semolina, almonds, and chopped pepper in a bowl.
- 4. Season the mixture with salt.
- 5. Let the quark mixture swell for ten minutes.
- 6. Cut the bell peppers into quarters lengthwise.
- 7. Remove the seeds from the pepper quarters.
- 8. Rinse the deseeded pepper quarters.
- 9. Cut the pepper quarters into thin strips.
- 10. Peel the garlic.
- 11. Peel the onion.
- 12. Cut the garlic into strips.
- 13. Cut the onion into strips.
- 14. Wash the lemon thyme.
- 15. Shake the thyme dry.
- 16. Set aside two sprigs of thyme.
- 17. Pluck the thyme leaves from the remaining sprigs.
- 18. Pour the vegetable broth into a pot.
- 19. Add the pepper strips to the pot.
- 20. Add the garlic strips to the pot.
- 21. Add the onion strips to the pot.
- 22. Add the thyme leaves to the pot.
- 23. Bring the mixture in the pot to a boil.
- 24. Cover the pot.
- 25. Simmer the vegetables on low heat for ten minutes.
- 26. Separate the egg: Carefully lift the yolk away from the egg white.
- 27. Whip the egg white until stiff.
- 28. Fold the whipped egg white into the quark mixture using a rubber spatula.
- 29. Rinse two tablespoons under cold water.
- 30. Shape eight elongated dumplings from the quark mixture using the wet spoons.
- 31. Bring salted water to a boil in a pot.
- 32. Add the quark dumplings to the boiling water.
- 33. Cook the dumplings for ten minutes on low heat.
- 34. Ensure the water moves slightly and does not boil vigorously.
- 35. Wash the cherry tomatoes.
- 36. Let the tomatoes drain.
- 37. Halve the cherry tomatoes.
- 38. Add the halved tomatoes to the pepper vegetables.
- 39. Heat the vegetables with the tomatoes for about five minutes.
- 40. Season the pepper vegetables with salt and pepper.
- 41. Lift the quark dumplings out of the water with a slotted spoon.
- 42. Serve the quark dumplings with the pepper vegetables.
- 43. Garnish the dish with the reserved thyme sprigs.
