🍽️ Spelt Dumplings with Quark and Vegetables

Ingredients
- 150 g Spelt
- 3000 ml Water
- 400 g Carrots
- 1 tbsp Curry
- 1 yellow bell pepper
- 1 onion
- fresh mint
- 500 g Low-fat quark
- 200 ml whipping cream
- 3 eggs
- 100 g Flour
- 120 g Semolina
- Salt
- Pepper
- 40 g Butter
Instructions
- 1. Rinse the spelt under running water.
- 2. Place the spelt in water and let it soak for at least 6 hours.
- 3. Stir the quark with the eggs until creamy.
- 4. Add flour, semolina, and a pinch of salt to the quark mixture.
- 5. Let the quark mixture swell for 30 minutes.
- 6. Clean and wash the bell peppers and carrots.
- 7. Cut the carrots into bite-sized pieces.
- 8. Cut the bell peppers into cubes.
- 9. Peel the onion and slice it into rings.
- 10. Heat some butter in a pan.
- 11. Sauté the onion rings in the butter.
- 12. Add the carrots and bell pepper cubes to the pan.
- 13. Season the vegetables with salt and pepper.
- 14. Simmer the vegetables for another 20 to 25 minutes.
- 15. Heat some butter in a pot.
- 16. Add the drained spelt to the pot.
- 17. Pour in some of the spelt soaking water.
- 18. Season the spelt with salt and pepper.
- 19. Simmer the spelt for 15 minutes.
- 20. Use spoons to scoop portions from the quark mixture.
- 21. Place the dumplings in boiling water.
- 22. Let the dumplings cook for 12 minutes.
- 23. Add the cream to the carrot vegetables.
- 24. Stir the curry powder into the vegetables.
- 25. Adjust the seasoning of the vegetables with salt and pepper if necessary.
- 26. Serve the quark dumplings on plates.
- 27. Serve the carrot vegetables and spelt alongside.
