🍰 Quark Dumplings with Strawberry Sauce

Ingredients
- 250 g Skyr
- 2 Eggs
- Salt
- 70 g Whole wheat flour (5 tbsp)
- 60 g Whole wheat semolina (3 tbsp)
- 0.5 Organic lemon
- 200 g ripe strawberries
- 1 tbsp Honey
- Cinnamon (preferably Ceylon cinnamon)
- 1 tsp Butter
- 1 tsp Rapeseed oil
- 20 g Whole wheat breadcrumbs (2 tbsp)
Instructions
- 1. Whisk quark and eggs in a bowl until smooth.
- 2. Add 1 pinch of salt, flour, and semolina, then mix in.
- 3. Let the dough rest briefly.
- 4. Rinse the half lemon under hot water and dry it thoroughly.
- 5. Grate some zest using a fine grater.
- 6. Hull and wash the strawberries.
- 7. Roughly chop the strawberries and place them in a tall container.
- 8. Add the grated lemon zest, honey, and 1 pinch of cinnamon.
- 9. Blend the mixture finely with a hand blender.
- 10. Bring plenty of water with 1 tsp of salt to a boil in a large shallow pot.
- 11. Scoop small dumplings from the quark dough using a tablespoon.
- 12. Ensure the dough falls heavily from the spoon.
- 13. Add more semolina if the dough is too runny.
- 14. Slide the dumplings into the boiling water.
- 15. Reduce the heat immediately.
- 16. Simmer the dumplings over low heat for about 8 minutes.
- 17. Remove the dumplings from the heat when they float to the surface.
- 18. Melt butter and oil in a frying pan.
- 19. Toast breadcrumbs in the pan until golden brown.
- 20. Lift the dumplings out of the water with a slotted spoon.
- 21. Let the dumplings drain.
- 22. Toss the dumplings in the buttered breadcrumbs.
- 23. Serve the dumplings with the strawberry sauce.
