🍰 Crispy Quark Potato Dumplings with Caramelized Plums

Ingredients
- 700 g Potatoes
- 6 Plums
- 45 g Butter (3 tbsp)
- 30 g Honey (2 tbsp)
- 2 Pinch Cinnamon
- 250 g Quark (20% fat in dry matter)
- 50 g Coconut blossom sugar
- 30 g Raisins (2 tbsp)
- 150 g Spelt flour Type 1050
- 1 Egg
- 1 Pinch Cardamom powder
- 1 Pinch Clove powder
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small pieces.
- 3. Bring water to a boil and add the potato pieces.
- 4. Cook the potatoes over medium heat for about 15 minutes until tender.
- 5. Drain the cooking water.
- 6. Let the potatoes cool down for 10 minutes.
- 7. Wash the plums under running water.
- 8. Halve the plums and remove the pits.
- 9. Cut the plum halves into thin wedges.
- 10. Heat one tablespoon of butter in a small saucepan.
- 11. Add the plum wedges to the hot butter.
- 12. Sauté the plums for 3 minutes over medium heat.
- 13. Add the honey to the plums.
- 14. Continue to caramelize the mixture for 5 minutes.
- 15. Season the plums with a pinch of cinnamon.
- 16. Press the cooled potatoes through a potato ricer into a large bowl.
- 17. Add quark (curd cheese), sugar, raisins, flour, egg, and spices to the potatoes.
- 18. Knead everything into a smooth dough.
- 19. If the dough is too wet, add a little more flour.
- 20. Shape the dough into 18 small, flat dumplings.
- 21. Heat one teaspoon of butter in a frying pan.
- 22. Place 4 to 5 dumpling portions into the hot pan.
- 23. Fry the dumplings over medium heat for 3 to 4 minutes until golden brown on one side.
- 24. Turn the dumplings and fry them on the other side until golden brown as well.
- 25. Repeat the process with the remaining butter and dough.
- 26. Serve the finished quark dumplings with the caramelized plums.
