🍰 Crispy Quark Dumplings with Juicy Pears

Ingredients
- 2 pears
- 1 tbsp lemon juice and butter each
- 2 tsp powdered sugar
- 2 tbsp pear schnapps
- 300 g floury potatoes (from the day before)
- 100 g flour
- 150 g low-fat quark
- 1 pinch salt
- 1-2 egg (size M)
- 1 tbsp raisins
- 3 tbsp ghee
- cinnamon-sugar mixture
- mint (for garnish)
Instructions
- 1. Cut the pears into quarters.
- 2. Peel the pears and remove the core.
- 3. Cut the pears into thin wedges.
- 4. Heat the butter in a frying pan.
- 5. Sear the pear wedges briefly in the hot butter.
- 6. Add the powdered sugar and lemon juice.
- 7. Simmer the pears briefly.
- 8. Add the pear schnapps.
- 9. Remove the pears from the pan and place them in a bowl.
- 10. Let the pears cool down completely.
- 11. Grate the potatoes finely.
- 12. Add the flour, quark, a pinch of salt, the eggs, and the raisins to the potato mixture.
- 13. Knead everything into a smooth dough.
- 14. Shape small club-shaped dumplings from the dough.
- 15. Heat the clarified butter in a pan.
- 16. Fry the quark dumplings until golden brown in the fat.
- 17. Sprinkle the finished dumplings with the cinnamon-sugar mixture.
- 18. Plate the dumplings with the cooled pears.
- 19. Garnish the dish with fresh mint.
