  1. 1. Whip the cream until it forms stiff peaks.
  2. 2. Mix the quark with the vanilla and 5 tablespoons of sugar.
  3. 3. Gently fold the whipped cream into the quark mixture.
  4. 4. Wash the gooseberries and blueberries and pat them dry.
  5. 5. Let the cherries drain well.
  6. 6. Divide the cream-quark mixture into three separate bowls.
  7. 7. Puree half of the gooseberries, half of the blueberries, and half of the cherries separately.
  8. 8. Strain each puree through a fine sieve to make it smooth.
  9. 9. Mix one portion of the quark cream with the gooseberry puree.
  10. 10. Mix a second portion of the quark cream with the blueberry puree.
  11. 11. Mix the third portion of the quark cream with the cherry puree.
  12. 12. Fold some of the remaining whole fruits into each of the three creams.
  13. 13. Save a few whole fruits for decoration.
  14. 14. Sweeten the creams to taste with a little more sugar if desired.
  15. 15. Fill the three different creams into small bowls.
  16. 16. Decorate the bowls with the reserved whole fruits.
  17. 17. Serve the creams immediately.
