🍽️ Crispy Quark Patties with Marinated Vegetable Salad

Ingredients
- 2 Kohlrabi
- 200 g Carrots
- 100 g Snow Peas
- Salt
- 100 ml Vegetable Broth
- 3 tbsp Lemon Juice
- 2 tbsp White Wine Vinegar
- Pepper
- 1 Pinch Sugar
- 2 Spring Onions
- 2 Sprigs Thyme
- 500 g Low-fat Quark
- 150 g Durum Wheat Semolina
- 2 Eggs
- 1 tbsp Butter
- 3 tbsp Breadcrumbs
- 3 tbsp Sunflower Oil
Instructions
- 1. Peel the kohlrabi and the carrots.
- 2. Slice the kohlrabi into 1 cm thick rounds.
- 3. Cut the carrots into 0.5 cm thick and 4 cm long slices.
- 4. Wash the snow peas and remove the tough strings.
- 5. Halve the snow peas.
- 6. Bring water with salt to a boil.
- 7. Blanch the kohlrabi and carrots in the boiling salted water for about 5 minutes.
- 8. Blanch the snow peas in the same water for 2 minutes.
- 9. Drain the vegetables and shock them with cold water.
- 10. Place the vegetables in a bowl.
- 11. Heat the broth.
- 12. Stir the lemon juice and vinegar into the warm broth.
- 13. Season the marinade with salt, pepper, and sugar.
- 14. Pour the marinade over the vegetables.
- 15. Cover the bowl and let the vegetables marinate for at least 3 hours.
- 16. Stir the vegetables occasionally during the marinating time.
- 17. Wash the spring onions and remove the dry tips.
- 18. Finely chop the spring onions.
- 19. Wash the thyme sprigs and shake them dry.
- 20. Chop the thyme leaves.
- 21. Mix the spring onions and thyme with the quark.
- 22. Stir the semolina and eggs into the quark mixture.
- 23. Season the mixture with salt and pepper.
- 24. Let the quark mixture rest for 30 minutes.
- 25. Heat the butter in a pan.
- 26. Shape 12 small patties from the quark mixture.
- 27. Coat the patties in the breadcrumbs.
- 28. Fry the patties on both sides over medium heat for about 4 minutes each until golden brown.
- 29. Mix the oil with the marinated vegetable salad.
