🍰 Quark Cake with Mandarines and Crumble

Ingredients
- 100 g flour
- 100 g ground almond kernels
- 3 tbsp sugar
- 1 pinch salt
- 1 tsp grated orange peel
- 50 g butter
- 1 egg
- 100 g cream cheese
- 1 small can mandarin
- 1 tsp grated orange peel
- 2 tbsp sugar
- 125 g whipping cream
- 4 sheets white gelatin
Instructions
- 1. Knead flour, almonds, sugar, 1 pinch of salt, orange zest, butter and egg into a firm dough. Wrap the dough in cling film and let it rest for 30 minutes.
- 2. Roll out two bases with a diameter of 20 cm from the dough, place them on a baking tray lined with baking paper and bake them in the oven (center, fan 180°) for 18-20 minutes. Let them cool. Crumble one of the bases.
- 3. Place the cake base on a cake plate and place a cake ring around it. Stir the cream cheese with mandarin juice, orange zest and sugar until smooth. Whip the cream stiff and fold it in.
- 4. Soak the gelatin in cold water, dissolve it dripping wet in a small pot over low heat, stir it with some cream and
- 5. stir it quickly into the rest of the cream. Let it set in the refrigerator for 30 minutes.
- 6. Distribute the mandarin fillets on the cake base, fill in the cream and smooth it out. Place the cake in the refrigerator for at least 2 hours. Remove it from the mold for serving, sprinkle it with the crumbs and cut it into pieces.
