  1. 1. Knead flour, almonds, sugar, 1 pinch of salt, orange zest, butter and egg into a firm dough. Wrap the dough in cling film and let it rest for 30 minutes.
  2. 2. Roll out two bases with a diameter of 20 cm from the dough, place them on a baking tray lined with baking paper and bake them in the oven (center, fan 180°) for 18-20 minutes. Let them cool. Crumble one of the bases.
  3. 3. Place the cake base on a cake plate and place a cake ring around it. Stir the cream cheese with mandarin juice, orange zest and sugar until smooth. Whip the cream stiff and fold it in.
  4. 4. Soak the gelatin in cold water, dissolve it dripping wet in a small pot over low heat, stir it with some cream and
  5. 5. stir it quickly into the rest of the cream. Let it set in the refrigerator for 30 minutes.
  6. 6. Distribute the mandarin fillets on the cake base, fill in the cream and smooth it out. Place the cake in the refrigerator for at least 2 hours. Remove it from the mold for serving, sprinkle it with the crumbs and cut it into pieces.
