🍳 Quark Pancakes with Fresh Fruit Salad

Ingredients
- 200 g low-fat quark
- 3 eggs
- 60 g spelt wholemeal flour
- 1 pinch vanilla powder
- 2 knife tips baking soda
- 1 tbsp coconut oil
- 300 g fruit (of the season)
- 2 tbsp honey
Instructions
- 1. Whisk the quark and eggs together in a bowl. Stir in the flour, vanilla, and baking soda (a leavening agent) until a thick, smooth batter forms.
- 2. Heat some oil in a non-stick pan. Add one tablespoon of batter to the pan and fry the pancakes for about 3 to 4 minutes, turning them over once, until golden brown on both sides.
- 3. Wash the fruit under running water, cut it into small pieces, and mix them in a bowl. Serve the warm pancakes together with the fruit salad and a drizzle of honey.
