🍽️ Quark Poppy Seed Pancakes with Berries

Ingredients
- 100 g Quark
- 100 g Flour
- 50 g Poppy Seeds
- 2 tbsp Sugar
- 4 Eggs
- 100 ml Milk
- 100 g Red Currants
- 2 tbsp Butter
- Icing Sugar (for dusting)
Instructions
- 1. Whisk quark, flour, poppy seeds, sugar, eggs, and milk in a bowl until you have a smooth batter.
- 2. Let the batter rest for a few minutes.
- 3. Thoroughly wash the berries.
- 4. Remove the berries from the stems.
- 5. Sort through the berries and remove any unripe or damaged pieces.
- 6. Gently pat the berries dry with a kitchen towel.
- 7. Gently fold the prepared berries into the batter.
- 8. Set aside a small amount of the berries to use for garnishing later.
- 9. Heat a large pan with butter.
- 10. Pour the batter into the hot pan.
- 11. Cook the pancake until the bottom is golden brown.
- 12. Carefully flip the pancake.
- 13. Reduce the heat to low.
- 14. Finish cooking the pancake for a few more minutes.
- 15. Tear the finished pancake into bite-sized pieces using two forks.
- 16. Place the pancake pieces into a baking dish.
- 17. Preheat the oven to 200 degrees Celsius.
- 18. Place the baking dish in the center of the oven.
- 19. Bake the pancakes for about 3 minutes.
- 20. Dust the finished pancakes with powdered sugar.
- 21. Garnish the dish with the reserved redcurrants.
- 22. Serve the pancakes warm.
