  2. 2. Whisk the mixture with a whisk until it is creamy and smooth.
  3. 3. Take the drained mandarins and mash them roughly with a fork.
  4. 4. Stir the jam into the mashed mandarins.
  5. 5. Gently fold the mandarin mixture into the quark.
  6. 6. Peel the oranges and the grapefruits completely, including the white pith.
  7. 7. Cut the citrus fruits into bite-sized pieces.
  8. 8. Catch the released juice in a separate bowl while doing this.
  9. 9. Put the citrus fruits and the collected juice into the serving glasses.
  10. 10. Fill the glasses to the top with the quark mixture.
